For the past year, I've been working hard behind the scenes on developing recipes for the AENpeeps community. I understand just how important it is to LOVE the food you're eating while also feeling GOOD again. I also completely understand the need for variety and new recipes! Food fatigue is one of the biggest reasons I see so many people not achieve their goals. When you're bored with your meals, you start to look for excitement again - and this can lead to meal choices that won't help you feel great. Fighting food fatigue was the main inspiration for Autumn's Nerdy Kitchen (ANK).

In honor of the release of Autumn's Nerdy Kitchen, today I'm sharing one of my absolute FAVORITE recipes from the Cookbook ~ Chipotle Cauli Tacos. Ever since I developed this, I have it at least a few times a month. It's become a new household favorite!


The recipe is inherently plant-based, however you'll notice adjustments to allow for animal protein if you wish as well as additional adjustments depending on your specific protocol from the Level Up Guide.

Chipotle Cauli Tacos

Serves 2

Ingredients:

1 small head cauliflower, chopped into bite sized pieces 2 chipotle peppers from canned chipotles in adobo sauce, divided 1 tsp. Olive oil 5.3 oz. full fat grass-fed yogurt OR unsweetened dairy-free yogurt for Beauty Qween Protocol 1/2 lime, juiced 2 cloves garlic, diced 1 cup black or pinto beans (you can also swap this out for 1/2 lb of your favorite protein such as cooked ground grass-fed beef or chicken!) Sea salt 6 small corn tortillas OR use romaine lettuce for Beauty Qween, Gut Healing Guru and Advanced Weight Loss protocols

Optional hot sauce, lime and cilantro to garnish


Directions

1. Preheat your oven to 400 degrees. 2. On a baking sheet lined with parchment paper, toss the cauliflower, olive oil, 1 chopped chipotle pepper and a heavy pinch of sea salt. Bake for 30-40 minutes. 3. In a small bowl, combine the yogurt, lime juice, garlic, remaining chopped chipotle pepper and pinch of sea salt. Stir to combine. 4. On each corn tortilla, add a spoonful (roughly 1 Tbsp.) of the yogurt sauce. Top with beans and the baked cauliflower. Optional to top with additional hot sauce, lime and cilantro.
