Today, I'm sharing one of the brand new recipes featured from my smoothie cookbook ~the Tropical Cucumber Smoothie.
This recipe is unique because we're adding in some veggies. I'm typically not known to add veggies into my smoothies because most veggie smoothies either:
taste "bleh" or
are so loaded with fruit and sweeteners that all veggie benefit is nearly lost
But I was able to create a refreshing, yet satiating veggie packed smoothie that you'll *actually* want to drink!

Tropical Cucumber Smoothie
10 oz. coconut milk
2 scoosp Autumn's Vanilla Protein Powder
1 Tbsp. chia seeds
2 Tbsp. coconut butter
1/2 cup frozen pineapple
1/4 cup frozen spinach
1/2 tsp. ground ginger
Add all ingredients and blend until smooth. Enjoy!
