5 FREE Recipes To Get You Ready For The Summer Intermittent Fasting Challenge

The Summer Intermittent Fasting Challenge is starting on MONDAY!!! AENpeeps around the world (myself included!) are kicking off the Summer by tapping into fat burning mechanisms, eating meals we LOVE and feeling GOOD again! Today, I'm sharing 5 recipes that are either featured from the Programs used in the Summer Intermittent Fasting Challenge or are great additions to the Challenge itself. Each of these recipes were designed to boost satiety and/or reduce prep and make your life easier. You have probably heard me mention before that I consider myself a "lazy" cook. I LOVE to cook and I LOVE eating amazing meals, but I also am extremely busy - as are MANY of the AENpeeps! Each of these recipes takes those factors into consideration.

Coconut Milk

Although this isn't a "meal", it's an extremely easy and inexpensive recipe to boost the quality of your smoothies while saving some money. I know that making your own "milk" can seem VERY time consuming and not worth the effort... and if we were talking about almond milk, I would agree (all that soaking, THEN blending, THEN straining time...). But what I particularly love about making your own coconut milk is that it can literally be made in 5 minutes or less. AND there's no "soak time" required.

Keto Coffee

I mean, you HAD to expect this would make the list, right?! Although Keto Coffee is NOT a requirement during the Summer Intermittent Fasting Challenge, it IS a great tool, especially if you're brand new to Intermittent Fasting. And if you're plant-based, you can still make Keto Coffee sans grass-fed butter with THIS recipe.


Keto Coffee

Serves 1

Ingredients:

12-16 oz. high quality, organic brewed hot coffee (I personally use Purity Coffee)

Up to 1 Tbsp. grass-fed butter

Up to 1 Tbsp. unrefined coconut oil


  1. In a blender, carefully combine the brewed hot coffee with the butter and coconut oil. If you are feeling less hungry, you can use less of the grass-fed butter/coconut oil.

  2. First blend on low for 5-10 seconds. Then repeat the process on medium and high. (This helps to ensure your coffee doesn't end up on the ceiling by immediately turning it to high!)

  3. Pour and enjoy!
