Today, I'm sharing a sneak peek of one of my favorite smoothie recipes from the new Summer Meal Plan, the Sunrise Surprise Smoothie. This recipe is based off of a recipe that my grandpa used to make for me growing up. It's packed with the protein and high quality fat to keep you satiated while minimizing sugars to help keep insulin (the storing hormone) from greatly spiking. In other words, this is a PERFECT break-fast to have with your Intermittent Fasting routine!

Sunrise Surprise Smoothie
8-12 oz. unsweetened coconut milk (homemade or from a carton)
1 cup full-fat, unsweetened greek yogurt (OR 1 serving vanilla or unflavored protein powder + 1 cup low-sugar plant-based yogurt)
1/2 meyer lemon (or regular lemon)
1/4 cup pineapple
1 Tbsp. hemp seeds
1 Tbsp. coconut butter
1 tsp. vanilla extract
pinch of sea salt
Optional 3 Tbsp. unsweetened toasted coconut flakes
1. Combine all ingredients, except for the coconut flakes, in a blender until smooth. Optional to top with 3 Tbsp. unsweetened toasted coconut flakes.
